I own a internet based bakery (bizzylizzybakery.com).  I also wholesale to stores and hospitals.  Bizzy Lizzy's basic concept is to provide high quality bakery items without "flour".  My goal is to prove that you can enjoy high quality products without the product that makes up about 80% of the industry (white bleached flour).  My customers feel I have proven the point well, so I started with cookies, moved into granola, and now we have muffins and even pies.  I will eventually figure out all areas of bakery items with my concept.

You may also be interested in the Product Center at MSU.  They are designed to help small food related business launch and be successful in the state.
